 <title>Umak od patlidžana (Baba Ganouj)</title>

                    Patlidžan uvodite s 12 mjeseci. 
Nutritivni profil: nešto vitamina C, kalij.
Odaberite patlidžane koji su sjajni, čvrsti, bez mrlja i teški za svoju veličinu. Meki, udubljeni ili umrljani su obično gorki. Veliki, tamnoljubičasti patlidžani su najčešći, ali druge dvije vrste – manji, bijeli patlidžani oblika jajeta i duguljasti, tanki svijetlo
ljubičasti također su iznimno ukusni i obično su manje gorki.
Patlidžani su dostupni cijele godine, ali su najbolji u srpnju i kolovozu.
Možete ga do pet dana čuvati u plastičnoj vrećici u hladnjaku, ali pripazite da ne oštetite
koru, jer će to izazvati stvaranje smeđih mrlja.        &lt;/div&gt;

dobar izvor proteina i pruže vitamine B2 (riboflavin) i B12 koji pomažu u rastu i razvoju. Studije pokazuju da možda postoji veza između dnevnog unosa jogurta i snažnijeg imunološkog
sustava. Svojem djetetu dajte jogurt koji sadrži žive i aktivne kulture. (Vrućina ubija korisne bakterije u jogurtu.) Bobice nisu samo lijepe i ukusne, već borovnice, kupine i jagode sadrže antioksidanse (kemikalije koje pomažu borbi protiv raka).

&lt;p&gt;svježi sir, krem sir, jogurt, če&amp;scaron;anj do dva če&amp;scaron;njaka, dva do tri mala kisela krastavca, kiselo vrhnje, đumbir u prahu, sol, papar, manja glavica luka... Sve sastojke stavite u blender i smiksajte, jogurta i vrhnja dodajte tako da umak bude koliko toliko tekuć, ali ne pretekuć.&lt;/p&gt;

&lt;p&gt;Prethodno treba 1 dobar komad mesa (veličine da može stati na dno lonca - oko 1 kg) nabosti češnjakom, štapićima mrkve i pancete.&lt;br /&gt;
Meso ostaviti preko noći u marinadi:&lt;/p&gt;

&lt;p&gt;Šampinjone očistite, operite, narežite na tanke listiće pa ih prokuhajte 15 minuta u posoljenoj vodi. Na mješavini maslaca i ulja popržite brašno, dodajte nasjeckani luk, zalijte s malo hladne vode, pa tek onda dodajte toplu vodu i neprestano miješajte da se ne stvore grudice.&lt;/p&gt;

&lt;li&gt;2 dl umaka od rajčice&lt;/li&gt;

&lt;li&gt;0,5 dl konjaka&lt;/li&gt;
